Kokuto Shochu Kikaijima is one of the unique styles of Shochu made from brown sugar. Kikaijima is actually the name of one of five Islands consist Amami Islands located in south of Kagoshima prefecture. These 5 Amami Islands are the only places allowed to produce the brown sugar shochu set by Japanese alcohol law. Kokuto Shochu Kikaijima has a nice sweet fragrance of brown sugar as well as a slight richness & sweetness in a flavour but also it has a dry crisp finish. It is a little bit Rum flavoring but due to Rice Koji using to ferment brown sugar, its flavour is definitely different from Rum. Recommend to be consumed in a rock glass with a few ice cubes or making sake cocktail such as Shochu Mohito mixing Kikaijima muddled with fresh lime, mint leaves & sugar syrup and topped up with soda water.
