Michisakari Junmai is one of the most famous super dry sake in Japan. For example, if you are in Japan, looking for a good dry sake goes well with food, you will meet this sake sooner or later. Very famous dry sake known in all over Japan. Michisakari Junmai is made from 45% polished Miyamanishiki rice. In general, if the rice is polished more than 50%, the sake should be categorized in Daiginjo / Junmai Daiginjo class, but this sake is only described as Junmai.. Michisakari Shuzo is aiming to make this sake only for people to enjoy it during a meal on the side of dishes, to make food taste even better. Thier policy is Sake is not a main topic on a table so they don't call this sake Junmai Daiginjo on purpose. . They call this sake MIZUKUCHI meaning sake tastes like water.
