This is medium rich & semi sweet flavoured special Junmai from Kumamoto Shuzo Kenkyojo.(Famous as the origin of recent Ginjo sake brewing style created by its founder Mr. Kinichi Nojiro known as God of Sake Brewing.) The reason why this sake is called SPECIAL JUNMAI is that this sake is made from special sake rice called SHINRIKI, the original of sake rice invented more than 100 years ago polished down to 60% which can be categorized under GINJO grade. The fragrance is very quiet but the flavour is clean & rich with a good amount of acidity & mineral. Great sake during a meal.
