This is a super premium Junmai Ginjo came out from Kumamoto’s sake central Kumamoto Shuzo Kenkyujo (Kumamoto Research Institute of Sake Brewing) founded in 1904 by the God of Sake Brewing Mr. Kinichi Nojiro. Mr Nojiro is famous for his great work of sake brewering such as invention of Kyokai 9 Go yeast (Kumamoto Kobo) that is the fundation of recent Ginjo brewing method. Koro Junmai Ginjo has smooth, clean & round flavour with light fragrance of Nashi pear or melon finishing dry with a nice amount of acidity. This bottle is very hard to find it even in Japan. MUST TRY!
