Tsuiji Zenbei Shoten is a small premium sake brewery located south west of Tochigi prefecture with over 200 years history. In a region, a younger generation of brewing masters has been training themselves to create something well balanced of tradition & innovation. Toji, brewing masters guild in this region is now called Shimotsuke Toji, a very new Toji group consist of new generation of Toji masters following the great Nambu Toji style & tradition. Tsuji Zenbei Kimoto Junmai is a quite good sake. Firstly, a good aroma of tropical fruits such as banana & mask melon pops up into your nose. Not too obviously but you can find them slightly but certainly. then rich taste and umami of rice driven over your palate. It sits there a bit then cut off with a dry crisp finish. Due to the Kimoto method, a longer fermentation process, it leaves a tiny bit of sweetness & soft yeasty aftertaste. This is a high quality during a meal sake. Limited Stock Only.
